La Laiterie Charlevoix A family-run business since 1948, besides fresh cheddar, it now makes aged cheddars using both pasteurized and raw milk as well as a soft cheese, le Fleurmier. L'Origine, le 1608 and l'Hercule are also made here. »
Our CheesesL'Hercule de Charlevoix is produced in 12 kilo wheels from the raw milk of the Stessi Farm located a short distance from the cheese dairy. This cheese requires between 6 and 18 months of refining and is somewhere between the Comté and Gruyère cheeses. »
